I am all about an easy yet nutritious breakfast.
My go-to is actually plain yoghurt with berries and a sprinkling of granola, but I will often make these overnight oats that are so quick to make and really delicious.
The addition of chia seeds makes it feel substantial and also I love the texture it brings.
I've used almond milk here, which keeps the recipe vegan, but any milk works well. Similarly, another sweetener like honey is great too.
Tips:
- When not in season, fresh berries can be swapped for frozen ones.
- Other toppings that work well are nuts like almonds and cashews. Banana is also great, as are stewed fruits like rhubarb, peaches and plums.

- 1.In a container or large bowl, combine the oats, chia seeds, milk, water, maple syrup, vanilla and a pinch of salt. Mix well to combine and cover.
- 2.Refrigerate overnight (or at least 6 hours). The mixture should be thick but spoonable. If too thick for your liking, loosen with some more milk.
- 3.Serve into bowls with an extra drizzle of maple syrup, some flaked coconut and berries.
