This recipe is everything you'd want from a crumble — a crisp, buttery topping with a layer of juicy fruit peeking through.
But the best part is you can whip it up in under half an hour while your little one's snoozing!
This spiced peach crumble is the quintessential summer-to-winter dessert, perfectly balancing the sweetness of summery peaches with the comforting warmth of cinnamon ginger and cloves. But this recipe is not actually about this recipe.
What I'm about to give you is THE perfect crumble base, to use with whatever canned or frozen fruit you have on hand.
Because when it's cold and your comfort-food craving kicks in, there's no way you're leaving the house to buy ingredients. You need crumble and you need it (almost) immediately.
The good news is that nothing can get in the way of you creating the most delicious dessert ever again — not exhaustion from work, life and multiple night-time wake-ups, not even cat-napping kids. You can bang this out in about 8 minutes and be devouring it fresh out of the oven 20 minutes later.
Let's do this.
Tips and substitutions:
- Digital scales are handy. I always find it easiest to use a digital scale to weigh my ingredients, rather than measuring with cups. This also means there's significantly less to wash up.
- The perfect crumble base. The first five ingredients are the base to any perfect crumble. Depending on what fruit you use, you could add spices (like in this recipe), vanilla essence, or even a bag of flavoured tea.
- Use whatever canned or frozen fruit you already have. In no way should you consider peeling fresh fruit or popping out to the shops to buy some. That is valuable time you could be spending on the couch. Plus, canned and frozen fruit are cheaper.
- You could choose to use a food processor to make the crumble. But then you'd be left with another bowl you'd have to clean, so I wouldn't.
- Use whatever baking dish you have. If you like a thin layer of fruit with more crumble (like me), opt for something larger, around 30cm. Or if you like your crumble on the fruit-heavy side, go for something smaller.
- Use brown or white sugar. Both will work. Brown adds a deeper caramel flavour, which is perfect for a winter-time crumble.

- 1.Preheat oven to 180°C. Drain the peaches and add to an ungreased baking dish (use whatever size you have, see tips above) with the sugar, vanilla and lemon juice. Stir to combine.
- 2.To make the topping, combine all ingredients in a medium bowl. Using your fingers, rub in the butter until crumbly. Then crumble over the peaches.
- 3.Bake in oven for 20 minutes or until golden brown. Enjoy with a scoop of vanilla ice cream. (Optional, but not really.)
